Drive-Thru and Dumpster Corral Cleaning Standard

Purpose

A dumpster corral's floor drain and a driveway's storm drain are opposite problems wearing the same grate. A flatwork job treats any storm-routed drain as off-limits to chemical runoff by default. A restaurant's dumpster corral is usually the reverse: the drain is routed to a grease interceptor specifically so kitchen and cleaning wastewater can go there, and the risk isn't sending chemical to the wrong place, it's sending too much grease-loaded water, too fast, into a trap sized for a slower load than a pressure washer's full output. Push a fast flush of hot, degreaser-laden water through an interceptor that's already carrying weeks of accumulated grease and you can flush that grease straight through into the sanitary line, which shows up as a kitchen drain backup days later that nobody connects back to a wash. This standard sets the routing check, the grease-specific chemistry, and the controlled-flow rinse that keeps that from happening, plus the scheduling rule for a lane that can't just close.

The failure it prevents: an interceptor upset traced back to a wash weeks after the fact, and a drive-thru lane blocked during a lunch rush because the job wasn't timed to a real slow window.

Scope

Exterior drive-thru lane and apron surfaces, and dumpster corral pads, at restaurants and small retail where a floor drain routes to a grease interceptor and the sanitary sewer. Covers routing confirmation, solids removal, food-grease-rated degreasing, controlled-flow rinsing, and drive-thru lane timing.

Does not cover a corral drain confirmed routed to storm, which reverts to the flatwork wastewater standard's containment rules instead of this standard's interceptor assumptions. Does not cover interior kitchen equipment, out of scope entirely. Off-hours access and signage mechanics for the site generally are owned by the commercial flatwork off-hours and signage standard and referenced here for the scheduling half only.

The procedure

  1. Confirm the drain's actual routing before scheduling, by asking the manager directly and, if uncertain, requesting the plumbing permit or as-built. Accept: routing documented as either grease-interceptor-and-sanitary, or storm. Wrong: assuming a corral drain is automatically grease-routed because that's the common case at a restaurant. Stop rule: unconfirmed routing gets treated as storm, the more restrictive assumption, until confirmed otherwise; no degreaser goes down under an unconfirmed drain. Hazard: none, this is a phone call or a records check.

  2. Where sanitary-routed, confirm the interceptor's most recent service date and whether it's near its own pump-out interval. Accept: a service record or manager confirmation showing real remaining capacity, not a guess. Wrong: scheduling a heavy-grease wash the same week an interceptor is already due for pump-out. Stop rule: an interceptor confirmed near or past due gets the wash rescheduled after service, or proceeds only with smaller sections and closer monitoring at step 6, name which on the ticket. Hazard: none.

  3. Hand-clear loose solids, food waste, cardboard, broken glass, before any water runs. Accept: the pad clear of loose solids, bagged or binned separately. Wrong: pressure-washing solid debris straight toward the drain, which relocates the exact slug-load an interceptor exists to prevent, whole, into the trap. Stop rule: anything sharp gets hand-removed and bagged, never rinsed toward the drain. Hazard: broken glass and sharps are common at a dumpster corral; cut-resistant gloves on before any hand-clearing.

  4. Apply a food-grease-rated degreaser, not the petroleum-rated product used on automotive oil, in sections rather than across the whole pad at once. Food-service grease is a saponifiable fat, a different chemistry than a petroleum hydrocarbon, and the petroleum-rated product from the driveway kit is optimized for the wrong bond. Accept: full wet coverage per section, dwell held to the label. Wrong: substituting the truck's automotive degreaser because it's what's on hand. Stop rule: if the food-grease-rated product isn't on the truck, the job is out of scope for today; reschedule with the right chemistry rather than substitute. Hazard: the same alkaline splash hazard as any degreaser; gloves and eye protection on, and if splash reaches skin or eyes anyway, then flush with clean water for the SDS-stated time and seek care if irritation persists.

  5. Rinse one section at a time at reduced flow, never the whole pad at the rig's full rated output toward the drain at once. Accept: flow reaching the drain stays a steady, moderate stream through the whole rinse. Wrong: sheeting the entire pad at full GPM and letting it all reach the grate in one sustained flood. Stop rule: if the grate visibly can't keep pace, stop rinsing that section and let it clear before continuing. Hazard: none new here beyond standard footing.

  6. Watch the grate continuously for standing water or backup, and stop the section immediately if it starts pooling. Accept: the grate keeps accepting flow with no standing pool forming around it through the whole job. Wrong: continuing to rinse into a grate that's visibly backing up on the assumption it will catch up. Stop rule: a pool that doesn't clear within a short wait means stop, and escalate to the manager; the interceptor may be closer to capacity than its service record suggested. Hazard: standing greasy water is a worse slip hazard than plain water; keep footing wide and deliberate near the grate.

  7. Where a drive-thru lane is in scope, time the work to a confirmed slow window from the manager, never a fully blind schedule, and keep at least one lane open if the site can't close at all. Reference the off-hours and signage standard for how that window and any barricading around it gets confirmed and marked. Accept: the wash window matches what the manager confirmed, with a working lane maintained if the location can't close. Wrong: scheduling the job by the crew's own route convenience without confirming against the restaurant's actual traffic pattern. Stop rule: an unconfirmed window means the drive-thru portion doesn't start until the manager confirms one, even if the corral portion is ready to go. Hazard: working near a live drive-thru lane means hi-vis and a clear sightline to approaching vehicles at all times.

  8. Walk the finished area for standing water, residual grease sheen, or odor, and document routing, interceptor status, and any re-treatment on the ticket. Accept: no standing water or sheen, no strong odor, and the full record entered the same visit. Wrong: a ticket that just says "completed." Stop rule: any residual sheen or odor gets a second pass before the crew leaves, not a note to check next time; standing organic residue at a dumpster corral also draws pests. Hazard: none, this is the final check.

The record this produces

The ticket carries the confirmed drain routing, the interceptor's service status at the time of the job, which sections needed re-treatment and why, and the drive-thru window used if applicable. A manager or office reviewing this across a recurring contract is watching for the same section needing repeat treatment, which signals either the interceptor is undersized for the site's actual grease load or the service interval needs to shorten, not that the wash itself is being done wrong.

One run of this standard, filled in

A quick-service restaurant, drain confirmed grease-interceptor-routed, last pumped out six weeks into the site's own 90-day service interval per the manager's record. The corral pad runs roughly 150 sq ft, with the heaviest buildup under the dumpster's usual resting position, plus loose cardboard staged nearby.

  • Step 1: routing confirmed grease-interceptor-and-sanitary by the manager. Pass.
  • Step 2: six weeks into a 90-day interval, meaningful capacity remaining. Pass.
  • Step 3: cardboard and food waste hand-cleared and bagged; a broken bottle found near the dumpster's wheel, bagged separately. Pass.
  • Step 4: food-grease-rated degreaser applied across three roughly 50 sq ft sections. The section under the dumpster's resting spot carried the oldest, most oxidized buildup and did not visibly emulsify within the label's dwell window. Fail. Stop rule taken: re-applied fresh product to that section for a second dwell cycle rather than increasing concentration past the label or extending pressure, since baked-on oxidized grease needs agitation and a repeat cycle, not more chemical strength.
  • Step 5: each section rinsed individually at reduced flow.
  • Step 6: the grate accepted flow throughout, no standing pool at any point, including through the section's second treatment.
  • Step 7: no drive-thru lane in this job's footprint; the corral sits set back from the lane, so this step's window requirement didn't apply. The visit was still scheduled during the restaurant's confirmed between-meal lull per the off-hours standard, and noted as not applicable on the ticket rather than skipped without comment.
  • Step 8: final walk found no standing water, sheen, or odor. Ticket recorded the routing confirmation, interceptor status, and the step 4 re-treatment.

The job held because step 4's stop rule reached for a second treatment cycle instead of a stronger mix, which is what the routing check in steps 1 and 2 exists to protect: an interceptor with real remaining capacity can absorb a slightly longer job; it can't absorb a slug of over-concentrated degreaser and grease pushed through in one pass.

When the call does not run as written

The corral drain is confirmed routed to storm, not a grease interceptor. Stop using this standard's chemistry and drain-monitoring steps and hand the job to the flatwork wastewater containment standard instead, treating the drain as off-limits to any chemical runoff by default.

The interceptor is confirmed at or past its due service. Reschedule after pump-out where possible; where the account needs service before that's practical, work the smallest sections the job allows and monitor the grate more closely than step 6's normal cadence.

The location's drive-thru runs continuously with no slow window at all. Work the outer apron only, away from the active lane, and do not attempt any section that would require blocking the lane at any point.
